Ingredients

  • 100 g 1/2 cup Granulated sugar

  • 30 g 1/8 cup Unsalted butter

  • 60 ml 1/4 cup Heavy cream

  • 30 ml 1/8 cup Whiskey

  • 1 g 1/6 tsp Sea salt

Equipment

  • Medium-sized saucepan
  • silicone spatula
  • Measuring cups (US)
  • Heat-resistant jar

Directions

  • In a medium-sized saucepan, add the granulated sugar over medium heat. Stir continuously with a wooden spoon or silicone spatula until the sugar melts and turns a deep amber color. This will take about 5-7 minutes. Be patient and careful not to burn the sugar.
  • Once the sugar is fully melted, carefully add the butter. The mixture will bubble up rapidly, so stir continuously until the butter is fully melted and incorporated into the sugar.
  • Slowly pour in the heavy cream while stirring. The sauce will bubble up again, but keep stirring until you achieve a smooth consistency.
  • Remove the saucepan from the heat and carefully stir in the whiskey. The alcohol will cause the mixture to bubble, so add it slowly and stir until fully incorporated.
  • If you prefer a salted caramel sauce, stir in the sea salt at this stage.
  • Allow the sauce to cool for a few minutes before transferring it to a heat-resistant jar or container. The sauce will thicken as it cools.
  • Drizzle the whiskey caramel sauce over your favorite desserts or store it in the refrigerator for up to two weeks. Reheat gently before serving if needed.

Notes

  • For a more intense whiskey flavor, feel free to increase the amount of whiskey to 45 ml (1.5 ounces). However, be mindful that this will also increase the sauce’s overall potency.

Can I use any type of whiskey for this recipe?

Yes, you can use any type of whiskey you prefer. However, the flavor of the whiskey will impact the final taste of the sauce. A smoky Scotch will give a different profile compared to a sweet bourbon. Choose a whiskey you enjoy drinking for the best results.
