Ingredients

  • 500 g 1 lb Ground Beef or Chicken

  • 1 tablespoon 1 tablespoon Olive Oil

  • 1 tablespoon 1 tablespoon Taco Seasoning

  • 200 g 1 Rice

  • 200 g 1 Black Beans

  • 100 g 1 Cherry Tomatoes

  • 100 g 4 Lettuce

  • 100 g 1/2 Corn Kernels

  • 1 1 Avocado

  • 1 1 Lime

  • 60 ml 1/4 Sour Cream

  • 100 g 1 Cheddar Cheese

  • Salt and Pepper

Directions

  • Cook the Rice: In a saucepan, cook the rice according to package instructions. Set aside once done.
  • Cook the Meat: In a skillet, heat the olive oil over medium-high heat. Add the ground beef or chicken and cook until browned. Stir in the taco seasoning, and cook for an additional 2 minutes. Remove from heat.
  • Prepare Vegetables and Toppings: On a cutting board, dice the avocado and halve the cherry tomatoes. Shred the lettuce and get the corn and black beans ready.
  • Assemble the Bowl: In a large serving bowl, create a base layer with rice and black beans. Add the cooked meat, then top with shredded lettuce, cherry tomatoes, corn kernels, diced avocado, and shredded cheddar cheese.
  • Final Touches: Squeeze lime juice over the assembled bowl for added flavor. Add a dollop of sour cream on top.
  • Season: Sprinkle with salt and pepper to taste.

Notes

  • For added flavor, try using homemade taco seasoning by mixing chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of cayenne. 

Can I use another type of protein instead of beef or chicken?
