Ingredients

  • 2 2 large sweet bell peppers

  • 1 1 small onion

  • 2 2 cloves garlic

  • 1 tablespoon 1 tablespoon olive oil

  • 1/2 teaspoon 1/2 teaspoon salt

  • 1/4 teaspoon 1/4 teaspoon black pepper

  • 1/2 teaspoon 1/2 teaspoon smoked paprika

  • 120 ml 1/2 cup heavy cream

  • 120 ml 1/2 cup vegetable broth

  • 1 tablespoon 1 tablespoon unsalted butter

  • 1 tablespoon 1 tablespoon fresh parsley

Directions

  • Heat the olive oil in a large skillet over medium heat.

  • Cook the peppers until they soften and start to caramelize, about 10-12 minutes.
  • Transfer the sautéed vegetables to a blender. Add the vegetable broth or water, and blend until smooth.
  • If using an immersion blender, blend the mixture directly in the skillet.
  • Return the blended pepper mixture to the skillet (if using a blender).
  • Stir in the heavy cream and butter, cooking over low heat until the sauce is warmed through and slightly thickened, about 5 minutes.
  • Taste and adjust seasoning if necessary.
  • Remove from heat and stir in the chopped parsley if desired.
