Ingredients

  • 2 2 small potato

  • 2 2 large egg

  • 2 2 slices of whole wheat bread

  • 15 g 1 tbsp Butter

  • Salt & Black Pepper

  • 1 tablespoon 1 tablespoon Olive Oil

Equipment

  • Frying pan
  • Spatula
  • Knife
  • Cutting board
  • Small mixing bowl
  • Potato peeler

Directions

  • Peel the potato and slice it into thin rounds, about 1/4 inch (0.6 cm) thick. Season with a pinch of salt and pepper.
  • Heat the olive oil in a frying pan over medium heat. Once hot, add the potato cubes. Cook for about 10 minutes, stirring occasionally, until they are golden brown and crispy.
  • Crack the egg into a small bowl and beat lightly with a pinch of salt and pepper. Pour the beaten egg over the cooked potatoes in the pan, stirring gently to combine. Cook until the egg is fully set and mixed with the potatoes.
  • While the egg and potato mixture is cooking, butter the slices of bread. Place them in a separate pan, buttered side down, and toast until golden brown.
  • Spoon the potato and egg mixture onto one slice of the toasted bread. Cover with the other slice of bread.
  • Cut the sandwich in half if desired, and serve immediately while warm and crispy.

Notes

  • For a richer flavor, consider adding some grated cheese to the egg and potato mixture before cooking. This will create a deliciously creamy filling.

Can I use sweet potatoes instead of regular potatoes?

Yes, you can substitute sweet potatoes for regular potatoes. The sweetness of the sweet potatoes will add a different flavor profile, making the sandwich a bit sweeter and equally delicious.
