Ingredients

  • 900 g 2 carrots

  • 3 tablespoons 3 olive oil

  • 3 tablespoons 3 honey

  • 1 tablespoons 1 tbsp hot sauce

  • 2 2 garlic cloves 

  • 1 teaspoon 1 teaspoon salt

  • 1/2 teaspoon 1/2 teaspoon black pepper

  • 1/4 teaspoon 1/4 teaspoon red pepper flakes (optional, for extra heat)

  • 1 tablespoon 1 tablespoon butter

  • 1 tablespoon 1 tablespoon fresh parsley

Directions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or aluminum foil.
  • Peel the carrots and trim off the ends. If using large carrots, slice them lengthwise in half or quarters to ensure even cooking. If using smaller carrots, you can leave them whole.
  • In a mixing bowl, combine the olive oil, 2 tablespoons honey, hot sauce, minced garlic, salt, and black pepper.
  • Add the carrots to the bowl and toss until they’re evenly coated with the honey mixture.
  • Arrange the carrots in a single layer on the prepared baking sheet, ensuring they’re not overcrowded.
  • Roast in the preheated oven for 20-25 minutes, turning halfway through, until carrots are tender and beginning to caramelize at the edges.
  • While the carrots are roasting, mix the remaining tablespoon of honey with the butter in a small bowl.
  • When the carrots are nearly done, drizzle them with the honey-butter mixture and sprinkle with red pepper flakes if using.
  • Return to the oven for an additional 3-5 minutes until the glaze is bubbling and carrots are fully caramelized.
  • Remove from the oven and transfer to a serving dish.
  • Garnish with fresh chopped parsley before serving.
