Ingredients

  • 300 g 10 4/7 oz Potatoes

  • 200 g 7 oz Carrots

  • 1 1 Large leeks

  • 1 1 Medium onion

  • 2 2 Garlic cloves

  • 1 l 4 1/4 cup Vegetable broth

  • 1 tablespoon 1 tablespoon Olive oil

  • 1 1 Bay leaf

  • 1 teaspoon 1 teaspoon Thyme

  • Salt and pepper to taste

  • 1 teaspoon 1 Fresh parsley

Directions

  • Start by peeling and dicing the potatoes and carrots, and slicing the leeks. Chop the onion and mince the garlic.
  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  • Add the diced potatoes, carrots, and sliced leeks to the pot. Stir well to combine with the onions and garlic.
  • Pour in the vegetable broth, add the bay leaf and thyme, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the vegetables are tender.
  • Remove the bay leaf, then season the pottage with salt and pepper to taste. Ladle the pottage into bowls and garnish with fresh chopped parsley.

Notes

  • For a creamier texture, you can partially blend the pottage using an immersion blender or by transferring a portion of the soup to a blender and then stirring it back into the pot.
