300 g 10 4/7 oz Potatoes
200 g 7 oz Carrots
1 1 Large leeks
1 1 Medium onion
2 2 Garlic cloves
1 l 4 1/4 cup Vegetable broth
1 tablespoon 1 tablespoon Olive oil
1 1 Bay leaf
1 teaspoon 1 teaspoon Thyme
Salt and pepper to taste
1 teaspoon 1 Fresh parsley

Directions
- Start by peeling and dicing the potatoes and carrots, and slicing the leeks. Chop the onion and mince the garlic.
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the diced potatoes, carrots, and sliced leeks to the pot. Stir well to combine with the onions and garlic.
- Pour in the vegetable broth, add the bay leaf and thyme, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 25-30 minutes, or until the vegetables are tender.
- Remove the bay leaf, then season the pottage with salt and pepper to taste. Ladle the pottage into bowls and garnish with fresh chopped parsley.
