Ingrédients

  • 8 8 Cayenne peppers

  • 4 4 Gousses d'ail

  • 120 ml 1/2 tasse White vinegar

  • 120 ml 1/2 tasse Water

  • 85 g 1/4 tasse Miel

  • 50 g 1/4 tasse Sugar

  • 5 g 1 cuillère à café Sel

  • 15 ml 1 cuillère à soupe Huile d'olive

  • 30 ml 2 cuillère à soupe Jus de citron

Equipement

  • Blender or food processor
  • Casserole moyenne
  • Fine mesh strainer
  • Fouet
  • Jar or bottle

Directions

  • Start by washing and drying the cayenne peppers. Slice off the stems and chop the peppers into small pieces. If you prefer a milder sauce, remove the seeds.
  • In a blender or food processor, combine the chopped cayenne peppers, minced garlic, vinegar, and water. Blend until you have a smooth mixture.
  • In a medium saucepan, heat the olive oil over medium heat. Pour in the blended pepper mixture and bring it to a simmer. Add the honey, sugar, and salt, stirring until the sugar dissolves. Allow the sauce to simmer for 15-20 minutes, stirring occasionally.
  • Stir in the lemon juice during the last 5 minutes of cooking to brighten the flavor.
  • For a smoother texture, pour the sauce through a fine mesh strainer into a clean bowl, pressing down on the solids to extract as much liquid as possible.
  • If you prefer a thicker sauce, mix the cornstarch with cold water to create a slurry. Slowly whisk this into the simmering sauce, cooking for an additional 2-3 minutes until thickened.
  • Allow the sauce to cool completely before transferring it to an airtight glass jar or bottle. Store in the refrigerator for up to 2 weeks.

Notes

  • For a hotter sauce, keep the seeds in the peppers or add an extra cayenne pepper. For a milder version, reduce the number of peppers or remove the seeds.

What is the best way to store the sauce?

The Sweet Cayenne Pepper Sauce is best stored in an airtight glass jar or bottle in the refrigerator. It will typically last for up to 2 weeks.
