  • 1 l 4 tasse Water

  • 100 g 1/2 tasse Sugar

Directions

  • Prepare the Rhubarb and Strawberries:
  • Rinse the rhubarb stalks thoroughly under cold water, trim the ends, and cut them into small, 1-inch (2,5 cm) pieces.
  • Rinse the strawberries, remove the stems, and slice them.
  • Cook the Rhubarb and Strawberries:
  • In a large pot, combine the chopped rhubarb, sliced strawberries, and water.
  • Bring the mixture to a boil over medium heat.
  • Reduce the heat to low and let it simmer for about 20 minutes, or until the rhubarb is soft and has broken down completely.
  • Strain the Juice:
  • Place a strainer or cheesecloth over a large bowl.
  • Carefully pour the rhubarb and strawberry mixture through the strainer, allowing the liquid to collect in the bowl below.
  • Press down on the solids with a spoon to extract as much juice as possible.
  • Discard the solids or save them for another use, like a fruit compote.
  • Sweeten the Juice:
  • While the juice is still warm, stir in the sugar until it dissolves completely.
  • Add the lemon juice if desired, to enhance the tart flavor.
  • Cool and Store:
  • Allow the juice to cool to room temperature.
