Ingrédients

  • 115 g 1/2 tasse beurre non salé

  • 100 g 1/2 tasse sucre

  • 110 g 1/2 tasse dark brown sugar

  • 1 1 œuf

  • 1 cuillère à café 1 cuillère à café extrait de vanille

  • 190 g 1 1/2 tasse farine

  • 1/2 cuillère à café 1/2 cuillère à café bicarbonate de soude

  • 1/2 cuillère à café 1/2 cuillère à café sel

  • 170 g 1 tasse semi-sweet chocolate chips or chunks

  • Vanilla ice cream, for serving (optional)

Equipement

  • cast iron skillet
  • Mixing Bowl
  • silicone spatula

Directions

  • Preheat your oven to 350°F (175°C).
  • Lightly grease your cast iron skillet with butter or a light coating of cooking spray.
  • In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Stir until well incorporated and slightly thickened.
  • Add the egg and vanilla extract to the butter-sugar mixture and whisk until smooth and glossy.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until no flour streaks remain. Do not overmix.
  • Fold in the chocolate chips, reserving a small handful for topping.
  • Transfer the cookie dough to the prepared skillet, spreading it evenly with a spatula.
  • Sprinkle the reserved chocolate chips on top of the dough.
  • Bake for 20-25 minutes until the edges are golden brown and crispy, but the center is still soft. The center will appear slightly underbaked, this is perfect for a pizookie.
  • Remove from the oven and let cool for 5-10 minutes.
  • Serve warm, directly from the skillet, with scoops of vanilla ice cream on top if desired.

Notes

  • The cast iron skillet creates the best texture contrast between crispy edges and gooey center. If you don’t have one, any oven-safe skillet or even a 9-inch cake pan will work.
