Directions

  • Gently wipe the Chicken of the Woods mushrooms with a damp cloth to remove dirt. Avoid soaking them in water as they can absorb too much moisture. Trim off any tough or woody parts and cut the mushroom into bite-sized pieces.
  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until they become soft and translucent (about 3-4 minutes).
  • Add the Chicken of the Woods pieces to the pan. Cook for about 10-12 minutes, stirring occasionally, until the mushrooms become golden brown and slightly crispy on the edges. They will release moisture at first, but eventually, they will develop a nice caramelization.
  • Once the mushrooms are cooked through, stir in the smoked paprika, chili flakes, salt, and pepper. Add soy sauce for an extra depth of flavor, allowing it to coat the mushrooms evenly.
