  • 2 tranches 2 tranches lard

  • 1 cuillère à soupe 1 cuillère à soupe maple syrup

  • 1 cuillère à café 1 cuillère à café beurre

  • 1 cuillère à café 1 cuillère à café huile d'olive

  • 1/4 cuillère à café 1/4 cuillère à café Moutarde de Dijon

  • Sel et poivre à volonté

  • For the Maple Glaze:
  • 15 ml 1 cuillère à soupe maple syrup

  • 1 cuillère à café 1 cuillère à café beurre non salé

  • 1 pincement 1 pincement sel

Equipement

  • Small skillet
  • Petite casserole
  • Pince
  • Feuille de cuisson

Directions

  • Season the half chicken breast with salt, pepper, and a small dab of Dijon mustard.
  • Heat the olive oil and butter in a small skillet over medium heat. Cook the chicken for about 6-7 minutes per side, until fully cooked (internal temperature should reach 165°F/74°C). Let it rest briefly, then slice into thin strips.
  • In the same skillet, cook the bacon until crispy, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  • In a small saucepan, melt the butter over low heat, then stir in the maple syrup and a pinch of salt. Stir until well combined, then remove from heat.
  • If desired, lightly toast the croissant in the oven at 350°F (175°C) for about 5 minutes.
  • Slice the croissant in half horizontally. Layer the sliced chicken and crispy bacon on the bottom half, then drizzle with a bit of the maple glaze.
  • Place the top half of the croissant on the sandwich, and drizzle a little more maple glaze over the top.

Notes

  • For extra flavor, you can marinate the chicken in a bit of maple syrup and mustard for added depth.

Can I use store-bought rotisserie chicken instead of cooking fresh chicken?

Absolutely! Using rotisserie chicken is a great time-saver. Just shred or slice the chicken and heat it slightly before assembling your croissant.
