Ingredients

  • 2 2 Ciabatta Rolls

  • 4 4 Eggs

  • 4 slices 4 slices Bacon

  • 2 slices 2 slices Cheese

  • 1 1 Avocado

  • 1 1 Tomato

  • 1 handful 1 handful Baby Spinach

  • 2 tablespoons 2 tablespoons Butter

  • 1 tablespoon 1 tablespoon Olive Oil

  • Salt and Pepper, To taste

  • Hot Sauce or Mayonnaise (optional)

Directions

  • Slice the ciabatta rolls in half. If the rolls are large, you may want to trim them slightly for easier handling.
  • Slice the avocado and tomato. Set aside.
  • Heat a non-stick frying pan over medium heat. Add the bacon slices and cook until crispy, about 4-5 minutes per side. Remove and place on a paper towel to drain excess grease.
  • While the bacon is cooking, toast the ciabatta rolls. You can do this in a toaster oven or on a hot pan until the edges are golden and crispy.
  • In the same pan used for the bacon, melt 1 tablespoon of butter. Crack the eggs into the pan, season with salt and pepper, and cook to your desired doneness.
