Ingredients

  • 400 g 2 1/3 cup black beans

  • 120 ml 1/2 cup water

  • 1 1 small carrot

  • 1 1 small onion

  • 1/2 teaspoon 1/2 teaspoon olive oil

Directions

  • Heat the olive oil in a Medium skillet over medium heat. Add the chopped onion and carrot. Cook for about 5 minutes, stirring occasionally, until the vegetables are soft.
  • Add the drained black beans and water to the saucepan. Bring to a simmer and cook for another 5 minutes, allowing the beans and carrots to become tender and the flavors to meld.
  • Transfer the bean and vegetable mixture to a blender or food processor. Blend until smooth, adding more water if needed to achieve a creamy consistency.
