Ingredients

  • For the Chicken:
  • 4 4 boneless, skinless chicken breasts

  • 1 tablespoon 1 tablespoon olive oil

  • 1 teaspoon 1 teaspoon salt

  • 1/2 teaspoon 1/2 teaspoon black pepper

  • 1/2 teaspoon 1/2 teaspoon garlic powder

  • For the Honey Mustard Sauce:
  • 8 tablespoons 8 Dijon mustard

  • 4 tablespoons 4 honey

  • 2 tablespoons 2 mayonnaise

  • 1 teaspoon 1 lemon juice

  • Toppings:
  • 110 g 110 shredded Colby Jack cheese (or cheddar cheese)

  • 6 slices 6 bacon

  • 75 75 mushrooms

  • 2 tablespoons 2 fresh parsley

Directions

  • Make the Honey Mustard Sauce
  • In a small bowl, whisk together the Dijon mustard, honey, mayonnaise, and lemon juice until smooth.
  • Set aside half of the sauce for dipping later.
  • Cook the Chicken
  • Season the chicken breasts with seasoned salt, black pepper, and garlic powder.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat.
  • Sear the chicken for 4-5 minutes per side, until golden brown. (It will finish cooking in the oven.)
  • Assemble and Bake
  • Preheat your oven to 375°F (190°C).
  • Transfer the seared chicken to a baking dish.
  • Spread a generous amount of honey mustard sauce over each chicken breast.
  • Top with cooked bacon, sautéed mushrooms (if using), and shredded cheese.
  • Bake for 10-15 minutes, or until the cheese is melted and the chicken reaches 165°F (74°C) internally.
  • Serve
  • Garnish with fresh parsley.
  • Serve with the reserved honey mustard sauce on the side.

Notes

  • Marinate for More Flavor : Let the chicken sit in half of the honey mustard sauce for 1 hour before cooking.

Yes! You can prepare the chicken and assemble it with the honey mustard sauce, bacon, and cheese up to 24 hours in advance. Store it in the fridge, then bake when ready.
