Ingredients

  • For the Meatloaf:
  • 500 g 1 lb ground beef

  • 500 g 1 lb ground pork

  • 60 g 1 cup Italian-style breadcrumbs

  • 60 g 1/2 cup grated Parmesan cheese

  • 1 1 onion

  • 2 2 garlic cloves

  • 2 2 eggs

  • 120 ml 1/2 cup marinara sauce

  • 1 tablespoon 1 tablespoon tomato paste

  • 1 teaspoon 1 teaspoon fresh parsley

  • 1 teaspoon 1 teaspoon dried oregano

  • 1 teaspoon 1 teaspoon dried basil

  • 1 teaspoon 1 teaspoon salt

  • 1/2 teaspoon 1/2 teaspoon black pepper

  • 1 tablespoon 1 tablespoon olive oil

  • Optional for Topping:
  • 60 g 1/2 cup shredded mozzarella cheese

  • 2 tablespoons 2 tablespoons grated Parmesan cheese

Directions

  • Preheat the Oven:
  • Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper or lightly grease a loaf pan.
  • Prepare the Aromatics:
  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped onion and sauté for about 5 minutes, until softened. Add the minced garlic and cook for another 30 seconds until fragrant. Set aside to cool slightly.
  • Mix the Meatloaf:
  • In a large bowl, combine the ground beef, ground pork, breadcrumbs, Parmesan cheese, cooled onion-garlic mixture, eggs, marinara sauce, tomato paste, parsley, oregano, basil, salt, and pepper. Use your hands or a spatula to mix everything until just combined—avoid over-mixing, as this can make the meatloaf dense.
  • Shape the Meatloaf:
  • Transfer the meat mixture to the prepared baking sheet or loaf pan, shaping it into a loaf. If desired, top the meatloaf with a few spoonfuls of marinara sauce.
  • Bake the Meatloaf:
  • Place the meatloaf in the preheated oven and bake for 50–60 minutes. The internal temperature should reach 70°C (160°F).
  • Add Cheese (Optional):
  • For a cheesy twist, sprinkle shredded mozzarella and extra Parmesan on top during the last 10 minutes of baking. Return to the oven until the cheese is melted and bubbly.
  • Rest and Serve:
  • Once baked, remove the meatloaf from the oven and let it rest for 10 minutes before slicing. Serve with extra marinara sauce on the side.

Notes

  • Use a mixture of beef and pork for a richer flavor, but you can also substitute with all ground beef or even ground turkey for a leaner option.

Yes! You can prepare the meatloaf mixture up to 24 hours in advance. Simply store it in the refrigerator, covered, until you’re ready to bake. You can also freeze the uncooked meatloaf for up to 3 months. When you’re ready to cook, thaw it overnight in the fridge before baking.
